Also known as hot and sour soup, Tom Yum soup is a culinary staple in its country of origin, Thailand, and rightfully so.
The broth of the soup is made from a combination of shrimp or chicken stock and fresh, aromatic ingredients such as kaffir lime leaves, lemongrass, galangal, fish sauce, and crushed Thai peppers.
While some newer versions of the recipe include straw mushrooms, our homemade Thai red chili paste gives the soup a bright orange-red hue, and enhances its spiciness.
